- 2 1/4 cups organic flour
- 1 teaspoon baking soda
- 1 teaspoon sea salt
- 3/4 cup organic butter softened
- 3/4 cup turbinado sugar
- 3/4 cup organic brown sugar
- 1 teaspoon organic vanilla extract
- 2 large eggs
- 2 cups (12oz pkg) organic semi-sweet chocolate chips
It is important that you follow these instructions in order to obtain the best results. Once you've gained experience, you can experiment, but if this is your first time, it is best to follow this recipe to the letter.
- Mix the flour, baking soda and salt in a small bowl
- Mix the organic butter, turbinado sugar, organic brown sugar and organic vanilla extract in a large bowl and mix until creamy
- Add one egg at a time, mixing well after each
- Gradually beat in the flour mixture until the mix turns into a semi-hard dough
- Stir in gradually the chocolate chips
You need to let the batter/dough sit for at least 45 minutes to 1 hour before baking. If you don't, the cookie dough will rise and then fall in the center and the cookie's will basically burn. This is something I learned by experience so I'd suggest you follow my recommendation.
Drop rounded tablespoons of dough onto non-stick backing sheets (or use a small amount of butter where you will place the dough) and bake between 9 to 11 minutes or until light/golden brown. Bake to a light-brown so cookie can stay soft and chewy. Bake to a darker-brown if a crunchy bite is desired.
You can reduce the amount of butter by about 1/4 without impacting the overall cookie taste. You can also reduce the amount of sugar by the same amount since you turbinado sugar is sweeter than granulated sugar. Experiment by lowering the quantities of butter and sugars until you've found the minimal amount without impacting taste.
